As the weather gets colder, I always have soup for lunch. I may be a bit boring but I really do enjoy it and its usually quick and easy to make. I like to add lentils to soup. They just add that bit of body and, of course protein and fibre. You really don’t need bread.

Since its October, the carb of the month has to be apples. I don’t think fruit should be avoided when you have Diabetes; you just have to take care with which ones you are choosing and how much you eat. (I’m not a big fan of juices but that’s another blog!).
When I was a child , I hated sweet potatoes. Back then, we had the purple variety rather than the golden orange ones you mostly see in the stores today and I wasn't a fan. Now I quite like them and much prefer them to regular white potato.
