I’ve been working on some recipes for a residential home and really like this chicken Caesar Salad. It’s quick and easy and not too bad on the carb count either
Chicken Caesar Salad (serves 2- ---2.5g Carbs per serve)
2 skinless chicken breasts, 125g
100g cos lettuce, torn into strips/chunks
Parmesan shavings, to serve
For the dressing
Blend the dressing ingredients until smooth and creamy. Season to taste
Heat your pan until…well, hot. Brush the pan with oil and cook chicken.
Pop lettuce leaves in the bowl and spoon over dressing. Toss to coat leaves.
Place the chicken on top and sprinkle with parmesan shavings
(* if you add croutons – each Tbsp. croutons is around 2 g carbs on average)
