Tuna Nicoise


Tuna Nicoise (serves 2 - 7g carbs per serving)

Sandwiches can be so boring. I am always on the lookout for alternative lunch recipes. The original Nicoise salad had anchovies so you could add them if you like. Depending on how much carbohydrate you need, you could eat this on its own or you could add a small amount of flat bread. Either way, it's good.

Ingredients

  • 1 tbsp. olive oil

  • 1 tbsp. fresh lemon juice

  • 2 tuna steaks

  • 85g fine green beans, cooked

  • 100g mixed salad leaves

  • 6 cherry tomatoes, halved

  • ½ small red onion, sliced

  • 1 hardboiled egg

  • one handful pitted black olives

  • Salt and pepper

For the dressing

  • 1 tbsp. olive oil

  • ½ tsp white wine vinegar

  • 1 small clove garlic, crushed

  • •3 tsp mayonnaise

Method Mix together the oil and lemon juice and season well. Place the tuna on a shallow dish and pour over the marinade. Chill for 30 minutes, turning occasionally. Put the green beans, salad leaves, tomatoes, onion, egg and olives into a bowl. Whisk together the ingredients for the dressing and then pour it over the salad and toss well. Heat your pan until hot and place the tuna steaks on, brush with marinade and cook for 5 minutes, turning once until cooked.

Arrange the salad on a serving plate and top with tuna steak.
